Not too sure about the pink...would this have always been white, historically?

I would say that the original finish was a limed rough stone wall, something like the left end of the building. Tarring was a form of damp proofing, but was primarily to stop the staining by passing carts throwing up mud mixed with unmentionable. Definitely not this doubtful pink or the flush render.
